CrockPot Chipotle Chicken with Sweet Potatoes


Day 153.


This was a fun dish to prepare because I had no idea what I was doing. I completely made it up. And not only did it cook nicely in the crock, it tasted good.

The Ingredients.

--enough chicken pieces to feed 4

--10 oz package of mushrooms

--1/2 chopped onion

--3 cloves minced garlic

--1 small sweet potatoes (peeled and chopped in chunks)

--2 green onions, chopped

--1 diced red bell pepper

--1/2 cup chicken broth

--1 t chipotle pepper

--1 t paprika

--1/4 t black pepper

--1 cup sour cream (to add later)


The Directions.

Add the chicken to the crockpot. I used frozen breast tenders. Prepare the vegetables and add on top of the chicken. Put in the broth, and add the spices. Cover and cook on low for 6-8 hours, or until the chicken is done and is beginning to shred.

Before serving, stir in the sour cream. If needed, heat on high for 30 minutes to bring back to desired serving temperature.

Serve over pasta or brown rice.

The Verdict.

This is a wonderful dish. The heat from the chipotle is nicely mellowed by the sour cream and the sweetness from the sweet potatoes. I would serve this to company---very yummy.

My kids ate this, but I did separate the chicken and the mushrooms for them, and gave them the rice in a separate bowl.

Blogger is giving me problems with extra spaces. Its quite annoying.

Entertaining With Your Slow Cooker

Do not read this as "Entertaining Your slow Cooker." Even though I anthropomorphize probably more than I should, I do draw the line somewhere. :-)

Were fast approaching the season for entertaining. The Holidays bring about many reasons for getting together, and many different ways to utilize your slow cookers so you can get out of the kitchen and enjoy your guests.

This past weekend I fired up the Crock-Pot Trio, and brought it to a friends house for a Halloween Party. I put in three different dips/appetizers:

Sundried Tomato Dip
Brie with Apricot Topping (this gets a lot of mileage. Its a favorite with my friends)
Sausage, Cream Cheese, and Rotel Dip (aka "mommy crack")

The Trio works well, but the cord is terribly short and each of the 3 (2-quart) inserts has a spoon slot, which means you have to put down a layer of foil while cooking/heating so your food doesnt dry out. This isnt much of a problem, but it is something to be aware of while using.

We arent hosting any big parties this year, but in the past have really utilized my collection of slow cookers to prepare and serve hot appetizers, beverages, side dishes, and a variety of main courses. I love it that I can put the food on early in the day, then tend to the other chores around the house while dinner cooks itself.


I also appreciate the opportunity to mingle with guests as they arrive instead of fiddling in the kitchen.

The slow cooker is also an excellent way to bring a dish to a friend or neighbors house who is hosting the main event. Oven and stove top space can be hard to come by, but theres always
an extra outlet available--even if it means plugging the cooker into an outlet in the garage.

Can Fish Oil Help with Barretts Esophagus

This is a topic that is close to my heart. My father struggles with this condition and hes not alone. So, first Id like to explain what Barretts Esophagus is and why you may want to consider fish oil if youve got it.

What is Barretts Esophagus?

Barretts esophagus is a relatively-rare condition that is caused by chronic exposure of the esophageal tissue to stomach acid. Its basically an extension of what youd experience with gastric reflux disease (GERD) but higher-up.

If you have this condition youre at higher risk for a deadly form of cancer called esophageal cancer.

What does fish oil have to do with Barretts Esophagus?

Population-based studies have found that Barretts esophagus may be less common in areas where fish is eaten regularly.

Researchers have also determined that omega-3 fatty acids (like fish oil) can help to lower inflammation in conditions like Barretts esophagus.

What did a recent study conclude? Is fish oil a possible tool in the fight against Barretts Esophagus and possibly a preventive agent against esophageal cancer?

First, lets be clear. This is only a preliminary study. But, the results of this research are promising. Heres why:

1. Researchers provided 27 patients with 1,500 mg of fish oil (in the form of EPA - a fatty acid found in fish) for six-months. Another 25 patients were provided with a placebo (an inactive agent) as a control for the study.

2. The researchers found that the 27 patients, who took the fish oil, had a higher level of EPA in their esophageal tissue. This is important because it shows that the affected tissue was directly being impacted.

3. Another important finding is that the 27 fish oil patients also had a lower level of COX-2 concentrations. COX-2 proteins are a marker of inflammation. And, as you can imagine, Barretts esophagus has a strong-inflammatory component (because of the stomach acid corroding the esophageal tissue).

4. The 25 patients, in the control group, did not show any significant changes in their condition (as expected).

Whats the take-home message, in your opinion?

If you have Barretts esophagus, you may want to ask your doctor about adding fish oil to your diet.

I know that its something that I would personally consider.

Any other comments?

Yes. Fish oil isnt for everyone. I certainly believe its a valuable supplement (and food) but there are some instances where it may not be appropriate.

(It's Friday and usually on that day I usually feature  Phase One Friday recipes from the past that have been my personal favorites.   I'll definitely keep doing that, but going forward I'm going to mix it up a bit and occasionally spotlight favorite recipes that aren't Phase One, for a new feature I'm calling Friday Flashbacks.  Today's favorite is this Low-Sugar Fresh Cranberry Salsa with Cilantro, Lime, and Jalapeno from my friend Trina, something I've made every year since I first tried it for Thanksgiving in 2011.  If you haven't tried this recipe yet, I highly recommend it!)

When my friend Trina started to talk about the fresh cranberry salsa she's been making every Thanksgiving for years, I was a bit skeptical until she told me the ingredients list.  I'm not someone who loves all things cranberry, but the combination of fresh cranberries with cilantro, green onion, lime juice, and jalapeno had so many of my favorite flavors, it was pretty much a given that I'd like it.  As soon as I tasted this (and loved it!) my brain started imagining ways to eat it.  Of course, this cranberry salsa would be fantastic on your Thanksgiving dinner plate next to the turkey, but I'd also love it spread on a turkey sandwich, layered into a turkey casserole, dipped up with celery or pita chips, or eaten as a pan-sauce over sauteed pork or chicken.  I can already tell this is one of those recipes I'll be making over and over, so thanks for sharing Trina!

(Updated with better photos and step-by-step instructions, March 2014.)  Have you heard that cauliflower is the new trendy vegetable for 2014?  I don't know who decides these things, but personally I'm kind of excited to see a versatile and low-glycemic vegetable like cauliflower getting the spotlight!  My love for cauliflower is well documented in the recipe archives, but there are quite a few of my early cauliflower recipes that can really use a photo update, like this amazing way to cook cauliflower I posted in 2006 when I was infatuated with Mark Bittman's wonderful book The Best Recipes in the World.  In this recipe with Tuscan origins, the cauliflower is briefly simmered, then sauteed in a generous amount of olive oil that's been seasoned with garlic and finished with both lemon zest and lemon juice.  This is a pretty garlic-flavored dish, which was fine with me. But if you're not sure how much you like garlic, or if you're planning a romantic evening, you might want to reduce the amount of garlic.

I've since seen many recipes comparing pureed cauliflower to potatoes, but this pureed cauliflower is perfectly happy about being cauliflower, and thrilled to be flavored with garlic, goat cheese, and Parmesan.  If you like cauliflower, this is good stuff.  If I was seriously dieting at the time, I'd be happy to have this cauliflower on my plate at Thanksgiving Dinner, next to some Whole Wheat Stuffing or Stuffing Muffins topped with gravy.

Ever since I made the Layered Mexican Casserole with Chicken and Green Chiles I find myself grabbing a few cans of Hatch Green Chile Enchilada Sauce whenever I'm at the grocery store.  There are other good brands of green chile enchilada sauce, but Hatch brand seems perfect to my tastebuds, and when I wanted to spice up this spicy ground turkey and pinto bean slow cooker soup the Hatch enchilada sauce plus a can of diced green chiles gave me just the right amount of heat.  I loved the soup with a little grated cheese sprinkled on top, and for those who'd like even more heat, Green Tabasco Sauce is the perfect thing to add to your soup at the table.

For weeks now I've been sharing Thanksgiving Recipes to give my readers plenty of healthy Thanksgiving options.  I like getting started early, but now I've already posted my Top Ten Thanksgiving Recipes and yet there's no doubt this Easy Brussels Sprouts Gratin with Swiss and Parmesan would have made it on to that list if I'd tested the recipe sooner.  But even so, it's the weekend before Thanksgiving, and this recipe is just too amazing to save for another year.  These delicious brussels sprouts are the siblings of several other easy vegetable gratin recipes I've made through the years, and any of those recipes can be assembled earlier in the day and then put in the oven to finish cooking while you carve the turkey and make the gravy. And I tested this out on my gorgeous niece Alyson who stopped by to pick up some soup, and she gave it an enthusiastic two thumbs up!

Easy-to-make and delicious Grilled Chicken and Veggie Kabobs with Garlic and Basil

(Updated with better photos and step-by-step instructions, July 2013.  These favorite Grilled Chicken and Veggie Kabobs with Garlic and Basil are reminiscent of ones I made often when I catered houseboat trips on Lake Powell in Southern Utah, and kabobs were always a hit on the houseboat.  They're made with a flavorful marinade using dried herbs and other ingredients you probably always have on hand.  Kabobs aren't really that difficult, but it's important to cut the food in same-size pieces so it will cook evenly. The other thing that can be tricky is putting the ingredients on the skewers tightly enough that food doesn't "spin" around when you turn the kabobs on the grill. If you're lucky enough to have Double Kabob Skewers like I do, that eliminates the problem of spinning.  I think this is perfect for an inexpensive summer dinner that's sure to impress; hope you enjoy!

A tummy-warming beef stew for the adults to eat while kids are eating candy!

(For Phase One Fridays I highlight Phase One recipes from the past that have been my personal favorites, and this recipe is one I'd love to make on the weekend so I'd have leftovers to eat for lunch of a quick dinner during the week.  If you're not a slow cooker fan, there are directions at the end for making this on the stove.)

On Halloween night you know the kids aren't going to want to eat anything but candy, so why not make this slow cooker beef stew with lots of adult flavors to keep the grown-ups happy?  You can start this mid morning and by dinner time it will be ready to go.  If you'll be gone all day, just do the advance prep the night before, refrigerate the ingredients in a plastic container, and put the cold ingredients in the slow cooker and let it cook all day while you're out.  I'd love this with a dollop of sour cream on top, but no matter how you eat it, this stew is loaded with flavor.  (There are also stove-top instructions if you don't have a slow cooker.)

A few years ago I shared  Al's Famous Hngarian Cucumber Salad, and that amazing recipe from my friend Al has been a huge hit with everyone who tries it.  When I made that salad with Al, we talked about cooking together again, but I'm sorry to report that it's taken us nearly two years to tackle another Hungarian dish together.  Then I saw Al and his girlfriend Judy at a party recently and we made a plan for them to come over and make Hungarian Summer Squash with Sour Cream, Paprika, and Dill.  This Hungarian dish uses a combination of  zucchini and yellow squash with all those Hungarian flavors I like so much, and it turned out to be just as good as the cucumber salad.  We had a great time making it a few days ago, and if you have summer squash in the garden, you must try this recipe!

(Updated with better photos and step-by-step instructions, August 2014)  One of the wonderful things about having summer squash in your vegetable garden is that soon you'll have so much of it you feel perfectly justified in picking them when they're tiny, similar to the baby squash you get in the fanciest of restaurants. I first posted this wonderful recipe for Easy Roasted Baby Summer Squash with Feta and Thyme back on 2007 when I had an abundance of baby squash from my garden, but now that I don't have a garden at the new house (yet!) I buy the packages of baby squash from Costco to make this. If you don't have a garden or a Costco membership you can still make this recipe with larger squash that are cut in strips.  Roasting the squash with fresh thyme concentrates the flavor in vegetables in the most lovely way, but dried thyme will also work fine for this recipe.

I re-did the photos for this recipe with my niece Kara and her adorable four-year-old daughter Quinn.  It had been a long cooking day and Quinn was getting tired of entertaining herself, so I grabbed a kid-safe knife and enlisted her to help cut the baby squash in half.  Quinn has pretty strong food preference, as most kids do at that age, and the whole time we were cutting them up she kept saying "I hate zucchini."  But when the finished dish was ready, she surprisingly agreed to take a bite, and even more surprisingly, she liked it and ate a couple of pieces.  So if you have kids who won't eat their vegetables, maybe getting them to help cook will help!

Shrimp, black beans, cilantro, and lime. It's a combination that goes together so well that you could easily come up with hundreds of recipes featuring this quartet. I bought a big bag of cooked frozen shrimp from Costco, and this was a salad I made for lunch after thinking to myself, hmmm, what else can I make with shrimp? The ingredients were determined by what I had in the fridge and pantry, as well as a well-documented love for cilantro, and this recipe has cilantro in the dressing and more cilantro in the salad, which is just fine with me.  If you're not a cilantro fan I think you could still get a pretty good result with thinly sliced green onion replacing the cilantro in the dressing and just using a little more green onion in the salad, but I wouldn't use parsley in place of cilantro here.
