CrockPot Peanut Clusters
Day 356.
11 days to go until 2009. Im going to cry.
Today is the first day of Hanukkah, and there are only a few days left until Christmas. If youre entertaining for the holidays, or need any last-minute hostess gifts, these peanut clusters rock. And they make A LOT. You could easily feed the entire neighborhood on one batch, or make yourself very, very sick.
I, um, have eaten too many. Much too many. Its Susan and Amies fault. I had to change Susans original recipe because I live in one of the few places in the world without a Walmart, and couldnt find Chocolate Bark. Nor did any of our grocery stores know what chocolate bark is/was. So I improvised, and am quite pleased with the results. My waistband, not so much...
The Ingredients.
3 (16-ounce) jars lightly salted roasted peanuts (lightly salted is important!)
2 (4-ounce) boxes German Bakers Chocolate
1 (8-ounce) box Unsweetened Bakers Chocolate (there are 2 in the picture. that was wrong.)
1 (24-ounce) bag semi-sweet chocolate chips
1 tsp vanilla (not pictured because I didnt know I wanted/needed it until after the photo)
The Directions.
Use a large crockpot. This makes about 150 peanut clusters. Spray the inside of your crock with cooking spray, and place the unwrapped baking chocolate, and bars of German chocolate in the bottom. Add all the peanuts. Pour in the chocolate chips, and add vanilla. Cover and cook on low for 3 hours, or high for about 1.5. While the chocolate is melting, lay out a bunch of parchment paper on your counter top or kitchen table. When time has elapsed, stir well, and remove from heat. Use a small ice-cream scoop to plop out bite-sized piles onto the parchment paper.
Let cool before eating---this takes a long time---hours. Itd be best to leave them overnight so you dont pick at them. Unless you have much more will power than I do, then I suppose it would be okay. But I sort of hate you.
Package up and give away as soon as possible.
The Verdict.
These are addictive. The chocolate flavor is quite rich, and tastes dark. If you arent a fan of dark chocolate, use milk chocolate chips. The salt flavor from the nuts is subtle, but is there, and it makes your tongue itch for more.

I was thinking about nut-allergies during the night. I think you should turn these into pretzel clusters. Definitely.

The Most Simple Thai Beef CrockPot Recipe in the entire world
Ive made some fantastic Thai recipes for the slow cooker, but got an email last week asking for a recipe for "stupid people" who dont want to chop or be in the kitchen for longer than about 12 1/2 minutes.
Dana is having her in-laws over this weekend and wanted to surprise her father-in-law with his favorite food: Thai Beef. She and her son are both gluten free, and they keep a gluten free household, but so far her in-laws dont really "get" the gluten free thing.
I feel your frustration Dana. I really do.
Here you go:
Totally Simple Thai Beef for stupid Everyday Regular People.
The Ingredients.
serves 4 to 6
2 pounds beef chuck roast
1 (8-ounce) bottle peanut satay sauce (Thai Kitchen is gluten free, or you can make your own with this recipe ---and if youre gluten free, you will of course use a GF soy sauce...)
1 (13.5-ounce) can coconut milk (full fat is best)
1 (16-ounce) package baby carrots (no chopping, Dana!)
cooked basmati rice for serving
1/4 cup chopped peanuts for garnish (optional)
The Directions.
Use a 6-quart slow cooker. Put the beef into the bottom of your cooker, and add the peanut sauce and the whole can of coconut milk.
Flip the meat over a few times to get it good and saucy. Add baby carrots (my dad says you have to rinse them off first). Cover and cook on low for 8 to 10 hours, or until meat is fork-tender and pretty much falls apart. Stir well to distribute sauce, and serve over hot rice.
Garnish with a sprinkle of peanuts, if youd like.
The Verdict.
Super tasty. The kids LOVED the meat, and ate quite a few of the carrots. The carrots cooked, but didnt get super soggy since they were on top of the meat. The baby is 9-months now, and I needed to use a bit of force to cut the carrots into finger food chunks with the edge of a fork for her.
Dana, I think your father-in-law will be happy!

Whether a diet to lose weight, improve your cholesterol levels, due to food allergy, because you have diabetes, or for any other reason, it is never easy to follow. The Daily reports that the physician researchers studied, dissected these difficulties to understand and perhaps around more easily.
Why give up on you on a diet?
You started a diet and you do arrive. You move away in you want. Yes but why do not you get? Twenty people were interviewed during a study to try to rank their reasons to abandon his plan. Not a grapefruit lover? I bet youve never tried a plump Ruby Red. These seedless beauties are blushing red and dripping with sweetness.
Full of bioflavonoids and carotenoids which fight off cancer, fresh oranges and grapefruit also contain disease-fighting phytochemicals which help to combat heart disease. Whats not to love?
Here are two out-of-this-world, sunshine-delicious recipes I cant get enough of.
Purple Cabbage Salad
from Elanas Pantry
½ head purple cabbage
1 orange, peeled and sliced into ½ inch segments
1 Tbsp olive oil
1 Tbsp apple cider vinegar
1 Tbsp lemon juice
dash chili powder
Slice the cabbage as thinly as possible and place in a large bowl. Add the orange segments. Toss with olive oil, vinegar and lemon juice, then sprinkle with chili powder.
This gorgeous dish tastes even better the next day after the flavors have marinated and blended together.
Mixed Greens, Fennel & Orange Salad
1 head leaf lettuce
1 head radicchio
2 heads Belgian endive, sliced
2 bulbs fennel, sliced
1/2 red onion, thinly sliced
3 oranges, peeled and segmented
1/4 C almond slivers
Dressing:
2 tsp fresh ginger root, finely grated
2 cloves garlic, crushed
1/2 tsp orange zest
2 Tbsp orange juice
3 Tbsp ruby red grapefruit juice
1 tsp raw honey
1/4 C extra-virgin olive oil
The crisp, licorice-flavored fennel, sweet orange and onions balance the slightly bitter tastes of endive and radicchio. Drizzle on the dressing and, sweet mercy, the symphony of flavors!

Slow Cooker Creamy Turkey Dinner Recipe
Q: Can you make a creamy turkey dinner with mushrooms without using a can of condensed soup?
A: Absolutely.
I havent bought condensed cream of something soup for about 10 years. I know this because Ive been married 11 years, and I know that during that first year of marriage I used this "wonder soup" a lot.
lots and lots. quite often, even.
I stocked up when the cans were on sale, and I gave myself a pat on the back when I saw them all lined up in the cupboard.
There is nothing wrong with using canned condensed soup.
Once in a while.
I dont personally buy or use it anymore because of our gluten allergy, and I although Ive learned there are non-glutenized soups now on the market, I still dont buy it because Ive gotten used to cooking without.
Im pretty much the furthest thing from a food snob. I figure whatever gets food on your table at the end of a busy day is good, whether thats Taco Bell, a frozen lasagna, gloppy condensed soup, or 365 (366) days of food from a crockpot. Its your choice.
This recipe was inspired from one of my early condensed soup crockpot meals I made (OFTEN) as a newlywed. This is a good dinner to eat in front of the TV while balancing a paper plate on your lap, sprawled out in an inflatable chair.
I miss our inflatable chairs!
The Ingredients.
serves 4-6
2 pounds turkey breast, cut in chunks
1/2 cup beef broth
2 tablespoons balsamic vinegar
1 onion, thinly sliced
8 ounces sliced mushrooms
1 tablespoon dried parsley (unless you have fresh, then use about 1/4 cup at the very end)
1/2 cup half and half or heavy cream
1 cup frozen green beans (I like the long thin ones, not the thick weird ones they give you in the school cafeteria)
The Directions.
Use a 4 quart slow cooker. Put the turkey into the bottom of your cooker, and pour on the beef broth and balsamic vinegar. Add onion, mushrooms, and dried parsley. Stir a bit to combine. Cover and cook on low for 6-7 hours, or on high for about 4. If you only have a 6-quart slow cooker, this will cook much faster, unless you increase the quantities. Remember that slow cookers work the best when theyre at least 2/3 of the way full.
If you are going to use a 6-quart, check after 4-5 hours on low, or 2-3 on high.
If youd like the turkey super tender and shreddy, cook for a longer period of time on low.
Stir in the heavy cream and green beans. Cover and cook on high for another 30 minutes, or until beans are thawed and heated through. Serve over cooked pasta.
The Verdict.
My kids wanted me to call this "Winner Winner Turkey Dinner" (theyve watched a bit too much of Guy Fieri, lately). I liked the combo of beef broth with the touch of vinegar when paired with the mushrooms. Its tasty, and you dont end up feeling like you ingested a weeks worth of sodium.
Adam ate two plates, and took the leftovers to work for the next days lunch.
Im going to keep my eyes open for an inflatable arm chair.

The principle of differentiated plans
These schemes have in common that allow them to eat almost everything, but not at the same time.
The idea is based on the belief that certain foods should not be digested at the same time, to avoid any adverse effects so-called - the creation of toxins, weight gain, etc.
They recommend to separate the eating certain foods or types of food: we can consume fat and sugar, for example, but not in the same meal.
Why are they differentiated regimes ineffective?
Some differentiated regimes are effective in the short term, but are often not on time.
The return to a more normal diet did gain it back. However, unless you have a will and high spirits, it is very difficult to stick to over time as they are not compatible with a normal social life.
Where does the success of differentiated regimes?
Many people swear dissociated diets work. And it is true that you can lose weight by dieting separated ... But this is due to anything other than the fact of not eating certain foods together.
If you are only entitled to a small group of foods (proteins and fats for example), your appetite will be stimulated less because you have less choice.
Moreover, these regimes that prohibit eating together lipids (fats) and carbohydrates (sugars) actually suppress the higher calorie items by nature, that is to say, pastries, chips, fries, chocolate, etc.
By removing these fatty and sugary foods, the total calorie intake decreases and you lose weight.
But this has nothing to do with the separation of food

mercury in food a last minute gift giveaway and the best ham s ever

I stopped eating tuna fish about 11 years ago, when I first became pregnant. I took my baby-prep research seriously, and followed all the "rules" the "experts" told me I should and shouldnt do.
After my first was born, I remember quizzing the pediatrician, "I can eat tuna again, right?"
I will never, ever forget her non-answer: "I dont think anyone should ever eat tuna. Its just not worth the risk since we dont know enough about it."
She was talking about mercury poisoning. Until a few days ago, I didnt know much about mercury except that it was bad. I didnt know it actually came from burning coal, and the coal emissions get in the clouds, which then get into the water supply through rain and snow. Every state in the country has issued a fish advisory of some type because of unsafe mercury contamination.
If you really think about it, everything has a high level of mercury because its in our water supply; all fruits and vegetables are watered with it, and all of the animals we eat have consumed it.
Mercury is linked to Alzheimers disease, cancer, premature birth, brain damage, premature death, and birth defects.
I cant fix this.

Cabbage Rolls CrockPot Recipe
Day 163.
Ive never had cabbage rolls before. I didnt even know they existed until I started this blog and kept seeing them pop up here and there on different slow-cooking sites. The very first cabbage roll recipe that I bookmarked, was Sandras, on a Slow-Cooking Thursday. I thought they sounded intriguing, but couldnt imagine that they tasted good. In my mind cabbage was for the cabbage soup diet.
I was way wrong.
Cabbage was invented for cabbage rolls. And for hiding babies. Or is it growing babies? Or for producing babies whose bodies are too big to fit into any regular doll clothes so you need to go out and get a specific type of doll clothes just for that one doll.
hmmph.
Anyhow, these cabbage rolls were wonderful. And since its day 4 of Retro Week, you should make them. My photo did not come out anywhere near as good as Sandras so just pretend that they look better. Because they taste awesome.
The Ingredients.
--1 head of cabbage
--1 egg
--1 8oz can tomato sauce
--1/2 cup uncooked brown rice
--1 envelope onion soup mix
--1 lb lean ground turkey
--1/3 cup shredded parmesan cheese
--2 cups**(see note below) regular V8 juice
The Directions.
--core your cabbage, and save it for the guinea pigs.
--very carefully, peel off large cabbage leaves (8-12, I used 8, Sandra used 12) and wash them. You need to lightly steam the cabbage leaves to wilt them enough to handle. I put the leaves in a covered casserole dish and microwaved on high for 2 minutes. They were perfect.
--in a mixing bowl, combine the turkey meat, raw rice, the egg, the onion soup mix, the cheese, and the can of tomato sauce. Mix well---the mixture will be like very gloppy meatloaf.
--Using a spoon, scoop about 1/3 of a cup of mixture into each cabbage leaf and roll or fold. Put the stuffed cabbage leaves into the bottom of your crockpot, seam side down.
If your cabbage has a bunch of nice leaves, use them all. I was stuck with only 8 good ones, and got frustrated and fed the rest of the cabbage to the guinea pigs.
Its okay to stack the rolls on top of each other in the crock.
**Top with 2 cups of V8 Juice. I used 2 cups of juice because I made 8 rolls. If you are using more rolls, use another cup of juice. The original recipe called for an entire 46 oz bottle of V8 which is an awful lot. I didnt want to use that much, and did not fully submerge my cabbage rolls. They steamed and cooked fine in less juice.
Cover crock and cook on low for 6-8 hours. Ours cooked for exactly 6 hours, and the meat was cooked and the rice was tender. Thats what youre looking for.
The Verdict.
I didnt think I would like these, but I really did. I am greatly looking forward to making them again. Adam and I each ate 3. The kids had packaged macaroni and cheese. I offered it to them, and was not surprised when they ran away. The rolls look really weird, but they taste fantastic.
Spinach Bisque Slow Cooker Recipe
You know the cozy feeling you get at the end of a long day when you put on your worn flannel pajama pants and throw a holey afghan over your shoulders so you can cuddle on the couch with a really good book?
This soup creates the same feeling: pure bliss and comfort.
In a bowl.
The Ingredients.
serves 8
1 (10-ounce) package frozen chopped spinach, thawed and drained (it was buy1 get1 free day when I made the minestrone!)
1/2 cup chopped onion
1/4 cup butter, melted
1/4 cup all-purpose flour (I used a gluten free baking mix)
2 cups milk (I used low fat)
1 cup water
1/2 teaspoon kosher salt
1/4 teaspoon ground nutmeg
1 (16-ounce package) Velveeta, cubed
The Directions.
Use a 4-quart slow cooker. Put the spinach into the bottom of your slow cooker. Add the chopped onion. In a mixing bowl, whisk together the butter and flour to form a roux (you could do this on the stovetop, but I usually melt the butter in the microwave and then stir in the flour) Slowly add the milk and water to the bowl. Add salt and nutmeg. Stir well to combine, and then pour mixture into your slow cooker on top of the spinach.
Add velveeta. Cover and cook on low for 5 to 6 hours, or until the onions are translucent. Stir well before serving in soup bowls (or bread bowls if youre fancy!)
The Verdict.
This is a creamy and decadent soup that will definitely take the chill off a cold day. The kids lapped their servings up as an afternoon snack before heading out to the soccer field. This was plenty filling for me, but Adam had his with a salami sandwich for dinner.

Not surprisingly, the first two blenders everyone in cyberspace seemed to recommend were the Vita-Mix and the Blendtec. With pricetags ranging between four and five hundred dollars, I quickly said, "Next, please!"
Enter the Oster® Fusion.
- Reversing blade – pulls ingredients in for better chopping and blending.
- 6-point star blade design – more blades for better food chopping and ice crushing.
- Pre-programmed setting for frozen drinks and food chopping – blender automatically shuts off.
Price tag: about $80 retail, but I got mine from Bed, Bath & Beyond with a 20% off coupon that came in the mail. Score!
I love it. Really, weve been quite happy together these last 20 months. There probably were not a whole lot of days when I didnt used this blender. In fact, just before sitting down to write, I loaded up its six-cup glass container with baby spinach greens, a juicy mango, a couple of frozen bananas, and two cups of coconut water. I pushed the little button under Pre-Programmed Settings that says, "Frozen Drinks & Shakes" (read: smoothies), and voilà , a minute later Im enjoying a quart-and-a-half of green smoothie, blended to perfection.
I rarely use the buttons under Manual Settings, but the other pre-programmed setting Ill often use is Food Chop. No need to lug out the food processor. The Oster Fusions 600 Watts of power does the job nicely. Perfect guac and salsa every time. Olé!
Clean-ups a breeze with the glass container. I wash mine by hand, but its dishwasher safe.
So, how does it compare to the big boys?
The Blendtec has pre-programmed settings too. Neither the Blendtec nor the Vita-Mix have glass containers. Both come with plastic BPA-free containers and both are larger than the Oster Fusion. I understand you can even purchase a 3-quart container for the Blendtec. Definite advantage if youre making smoothies for the whole family. Im not.
The Vita-Mix comes with a plunger thingy (Im almost certain thats not the technical term). Not quite sure what thats for. With the Oster Fusion, because of the reversing blades, items from the top are automatically pulled down and blended so I dont need to plunge anything.
Power: Yup, the Blendtec has 1560 Watts of power compared to the Fusions 600 Watts, and the Vita-Mix...well, that has more horsepower than my lawnmower, so no contest here. But, I wonder...why do you need so much power? I mean, what exactly are you folks blending that Im not?
Lets talk warranties
The Vita-Mix is "engineered to last" and comes with a 7-year warranty. Blendtec offers a 3-year warranty. My Oster Fusion had a 1-year warranty. I say "had" because Im coming up on two years here, so if it died tomorrow, Id be out of luck. But then again...the way I figure it, my blender paid for itself within the first two months at roughly a dollar a day. Sooooooo, who cares if it peters out tomorrow?
Whats the saying? – You get what you pay for. – Well, if thats the case, Ive hit the jackpot.
I dunno, guys. It seems like a no-brainer to me. It does the job and the price is right. If I had to make the same decision again when making the transition to raw foods, Id go with the Oster Fusion.
But if the big boys come a knockin and wanna play... hello, Im over here!

CrockPot Pumpkin Pudding crustless pumpkin pie
Day 332.
Happy Thanksgiving! I hope you have a wonderful day full of warm memories and lots of love.
If you are in need of some last-minute crockpot holiday food ideas, heres the list.
This year were going to have:
--cornbread stuffing
--sweet and sour caramelized onions
--candied sweet potatoes (Ill update the picture and recipe for this, too, after we eat)
--mashed potatoes with cream cheese and sour cream
--homemade cranberry sauce
--mulled wine
--this pumpkin pudding
oh! and an oven-roasted turkey.
I wasnt planning on doing any more Thanksgiving-y dishes; my mother-in-law is bringing store-bought pies and ice cream. My kids arent huge pie eaters, and have never shown any interest in pumpkin pie. Like, EVER. But my seven-year-old convinced me last night that its the crust of the pie that she doesnt like, but she likes the filling. And then her younger sister decided to say the exact same thing.
Crustless pie? Thats easy. I can do that. This is much better than my original plan, which was to open a can of pumpkin pie filling and hand them each a spoon.
The Ingredients.
--1 can of pumpkin puree (15 oz)
--1 can evaporated milk (12 oz--the big can, not the little guy!)
--3/4 cup white sugar
--1/2 cup Bisquick-type mix (I used Pamelas Baking Mix)
--2 eggs
--2 T butter, melted
--1 1/4 tsp cinnamon
--1/2 tsp nutmeg
--1/4 tsp cloves
--1/8 tsp ginger
--2 tsp vanilla extract
The Directions.
I used a 4 quart crockpot and it was the perfect size. If you only have a big one, you can use it, but be aware that the batter will be spread out more and will cook much quicker. If you insert an oven-safe dish into the crock, it will work, but the batter will be quite thick and will take a VERY long time. Plan accordingly.
Spray cooking spray into your crockpot.
Set aside.
In a mixing bowl, combine all of the ingredients, and whisk until fully blended. No need to use a hand or stand mixer, just some elbow-grease.
Pour the batter into the prepared crockpot. Cover and cook on high for 3-4 hours, or on low for about 6. Check your "pie" after 2 hours on high, and 3 hours on low, then check every 30 minutes.
When fully cooked, the pie will look just like a finished pumpkin pie. The batter will have browned and will crack in a few places. The center will have set enough for you to touch it without getting batter on your finger.
Let sit in the crockpot until room temperature, then spoon into serving dishes and top with whipped cream.
The Verdict.
Perfect. It tastes fantastic, is gluten-free, and was terribly easy to do. Well be making this again, and Im happy to have it to serve today.

How to Make Perfect Fudge in the Slow Cooker
I started reading about Intermittent Fasting this week which naturally got me to find a way to make fudge.
I know.
I dont understand me, either.
Dont wait until the Holiday season to make fudge again. This is SO easy a four-year-old could do it (unless her mom shoos her out of the kitchen so nobody knows how much fudge got eaten in the name of Quality Control).
The Ingredients
serves 10-20 (or Adam and Me on date night)
3 cups semi sweet chocolate chips
1 (14-ounce) can sweetened condensed milk
1 teaspoon pure vanilla extract
1 tablespoon salted butter
cooking spray to spray down the crock
parchment paper or non-stick foil to line a 9 x 9 baking pan
The Directions
Use a 4-quart slow cooker. If you only have a 6-quart, thats okay, but it will melt faster, so keep an eye on your chocolate.
Spray the crock well with cooking spray (if you are using a Ninja, Id still spray it down).
Dump everything into the pot. Cover, and cook on high for about 1 hour, or on low for about 2 hours. Stir every 30 minutes. Once the chocolate has lost its form and can be stirred into a liquid state, spread it out into a lined 9 x 9 baking pan.
Chill in the refrigerator overnight (or at least 4 hours) before cutting into bite-sized squares.
The Verdict
Its perfect. I wondered how the consistency would be without marshmallow fluff, but the condensed milk made the same sort of smooth texture with the chocolate as I wanted.
Because the mixture doesnt need to get boiled to a candy-making boiling point, this is a great recipe for kids. If youd like to, go ahead and add chopped nuts or candy canes for a peppermint version.

Quick and Easy Caramel Apple Cider CrockPot Recipe
A friend of mine treats her kids a few times a week to a caramel hot cider at Starbucks, and my kids are were jealous and kept bringing this up each time we drove by the strip mall.
So I evened the score. I made a boatload.
and the kids WERE THRILLED.
save yourself $3.50, and dig through the cupboards. You can do this. Its super easy.
The Ingredients.
serves 4, (can easily be multiplied --use a larger cooker though!)
4 cups apple cider
3 tablespoons caramel syrup (the ice cream topping)
1/2 tablespoon ground cinnamon
1/4 teaspoon ground cloves
4 tablespoons sweetened whipped cream (optional; I leave it off for my kids)
The Directions.
Use a 2-quart slow cooker. Now this is sweet---Ive modeled it after the stuff they serve at the store. After making it this way a few times, Ive successfully cut back on the syrup without my kids (and their friends!) knowing---do what is right for your own family.
Mix it all in together---stir, and cook on low for about 4 hours. I like to put it on after I clean up the breakfast dishes and then leave it alone until our after-school snack. Ive also made a large pot for Girl Scout events and playdates. The kids really like it, and its a nice change of pace from hot chocolate with marshmallows.
Leftovers refrigerate and reheat well (in the microwave).
The Verdict.
The only drawback to this recipe is that when we have caramel sauce in the house, it tends to get everywhere. Chris always says that she has an eighth child named "Not Me" who is the main mischief-maker in her home. "Not Me" is evidently to blame for sucking syrup right out of the bottle and leaving sticky fingerprints all over my doorknobs and couch cushions.

Homemade Beef Stock in the CrockPot
Day 147.
mmmm. Doesnt that look appetizing? Its a big pot of cold swirly beef juice. Yum.
Like a bunch of things Ive done this year, Ive never before attempted to make my own beef stock. Ive made chicken--but not beef. It was Erins idea, because I wanted to make her Pho (coming tomorrow!) Homemade beef stock tastes much better than the canned stuff. It is well-worth the effort involved.
I used a combination of a recipes that Chris and Kalyn posted as a guideline, but with ingredients I had on hand. I put the broth on at 5am, and had a sick kid in the house. Running to the grocery store was not an option.
The Ingredients.
--4 lbs oxtail (leftover package from when I made oxtail stew)
--1 cup baby carrots
--1 onion
--head of romaine lettuce (supposed to be celery)
--8 cloves garlic
--1 T Italian seasoning
--1 t kosher salt
--1 t pepper
--1 T apple cider vinegar (not pictured)
--water
The Directions.
This will take two days. Prepare yourself.
I used oxtail because I already had it in the freezer. Ox tail is rather expensive to use for beef stock---I ended up cutting the meat off the bone and mixing it with barbecue sauce to have over rice for lunch. Kalyn recommends saving scraps of meat for a few months in the freezer, and Chris recommends asking your butcher for free bones, or stealing them from the neighborhood dog. Your choice.
Roast whatever meat or bones you are going to use in a high-ish sided cookie sheet in the oven at 400 degrees for 30 minutes.
While the meat is roasting and releasing a bunch of flavor, wash and coarsely chop your vegetables to put in the crockpot. They do not need to look pretty.
When the meat is done, let it cool a bit, then scrape the meat and the juices into the crock. Add your spices and vinegar, and cover with enough water to fill the remainder of the crockpot. Cover and cook on low for 10-12 hours.

Your stock is now ready to be used in your favorite soup or stew, and can be frozen for later use.
The Verdict.
I used this beef stock the next day for Vietnamese Pho--coming tomorrow! It worked well, and was full of flavor. But it was a lot of work, and took a lot of time. Ill probably make stock again, but not for quite some time. Touching the gelatinous fat is not something I am eager to do anytime soon.
