Jimmy Moore Whole Foods and Links
I was plenty surprised to see JP "The Healthy Fellow" mentioned on another favorite blog of mine: Jimmy Moores Livin La Vida Low Carb. It looks like the health food store chain, Whole Foods, is starting up a new low-fat, vegetarian based "wellness program" that claims to be the key to greater health for the masses. Im sure many of the folks at Whole Foods believe this will, in fact, result in improved health for many of their customers and greater profits for themselves and their investors. Theres nothing wrong with that ... if it works. I for one am far from convinced that such a way of eating is healthful for the majority of people out there. I am however in favor of modeling a menu plan around real, whole foods such as grass-fed dairy and meat, free range chickens and eggs, organic fruits, nuts, seeds and veggies. These are the very same types of foods that have sustained countless generations and theyre what I continue to recommended (and use) wholeheartedly.

Here are 25 Deliciously Healthy Low-Carb Recipes found on Kalyn's Kitchen and other great blogs during January 2015.

It's already February 2; can you believe we're that far into the new year? I normally post this monthly round-up of 25 Deliciously Healthy Low-Carb Recipes on the first day of the new month, but I waited a day because I was pretty sure my low-carb round-up wouldn't be able to compete with the Superbowl! I spent last night at the Denny Family Superbowl Party at my brother Mark's house, where I tried hard not to consume too much of the sugary and carb-loaded foods most people bring. (And I took these Deviled Eggs with Green Olives for Mark, who loves green olives as much as I do.)
Of course in January when half the world goes on a diet it's a great month to spot low-carb recipes, both on Kalyn's Kitchen and other blogs around the web, so there are some amazing ideas being featured here. I also did a round-up of 25+ Amazing Low-Carb Slow Cooker Dinners on my slow cooker site, and if you take a look at that you'll have a double helping of delicious low-carb recipe ideas (just in case you got a little off track at your own Superbowl party!)

Whole Wheat Orecchiette Pasta Salad Recipe with Roasted Asparagus Red Bell Pepper and Mushrooms

Today the temperature in Utah is supposed to get above 90F so we've definitely entered the season for warm-weather eating, and lately I've had pasta salad on my mind. It seems like there are a lot of ho-hum combinations that give pasta salad a bad name, but I like the challenge of coming up with something that's really good, and I loved the Whole Wheat Spaghetti Salad I made recently. Then I excitedly discovered Delallo Organic Whole Wheat Orcchiette at the store in my new town, and my mind started spinning with thoughts of making a really drool-worthy vegetarian pasta salad. This Whole Wheat Pasta Salad with Roasted Asparagus, Red Bell Pepper, and Mushrooms has wonderful flavors from roasting the vegetables, and then I added this fun pasta shape, sliced green onion, chopped parsley, kicked-up Italian dressing and coarsely grated Parmesan to make a truly fantastic salad. If you can't find the whole wheat Orecchiette I used, just use any smallish whole wheat pasta shape, even macaroni. And if you're seeing this at a time of year when asparagus is not going to be available or you're not an asparagus fan, I'd just increase the mushrooms and red peppers and you'd still have a delicious salad. (If you skip the Parmesan and use a vegan dressing, this salad could easily be vegan.)
