Understanding Candida Finding A Healthy Balance

 
Today Id like to address Candida, a topic I see bandied about on many raw food blogs and forums. But first, a story. So grab yourself a green smoothie, get comfortable, and gather round.

Once Upon a Time...

It was pretty much always assumed in my family that I would enter into medicine. From the time I was a wee one, anytime I was asked, "What are you going to be when you grow up?" my response was always: A cowgirl and a healer. (Although sometimes I would say, An archeologist.)

After completing my undergrad, I went to work for a large health care system. And rather quickly became disenchanted with allopathic medicine. Surprise.

Enter Hanna Kroeger. Hanna was a 74-year-old spitfire with sparkly eyes and a German accent. She was a master herbalist and a healer, in every sense of the word. Someone had brought her into town and I attended her all-day workshop. She would become my teacher as I traveled back and forth to her Peaceful Meadow Retreat in Boulder, Colorado for further study.

Hanna believed and taught that we are ultimately responsible for our own health and that we each have the ability to heal ourselves given the right tools. I still refer to a number of her books regularly — God Helps Those Who Help Themselves, Ageless Remedies From Mothers Kitchen, Instant Herbal Locator, Heal Your Life With Home Remedies & Herbs. Each one a treasure, if you can get your hands on a copy.

Meeting Hanna was the beginning of a journey that would eventually lead me to study traditional healing methods with indigenous elders on four different continents over a period of twelve years.

Quite an unconventional life path. I guess you could say I grew up to become a cowgirl, an archeologist and a healer. *wink*

So Lets Talk Candida

Candida albicans is a fungus and its present in everybody. In small amounts its harmless, but when its growth increases drastically it can be devastating. The imbalance of excess candida is called candidaisis and its an epidemic in our very SAD (Standard American Diet) culture. Sadly, it often goes unrecognized and untreated.

Candidaisis may be one of the primary causes of ill health and obesity today. It creates a rapidly downward health spiral as it becomes prevalent in the body.

The candida fungus releases wastes into the bloodstream that have a profound effect on  both the nervous system and immune system. Common symptoms and complaints include:
  • cravings for sweets, alcoholic beverages, carbohydrates
  • excessive allergies
  • skin rashes
  • chronic acne
  • vaginal infections
  • depression
  • food sensitivities
  • exhaustion
  • headaches
  • irritability
  • memory loss
  • obesity or excessive weight loss
  • gas and bloating
  • diarrhea or constipation
  • tender, swollen breasts
  • earaches
  • numbness
  • multiple chemical sensitivities
  • PMS
  • leaky gut syndrome

Balancing Act

In a healthy body, the friendly bacteria in the intestines compete against fungi to maintain a healthy balance. Antibiotics, birth control pills, cortisone and foods containing antibiotics – factory farmed meat, poultry, dairy – kill the bacteria population, upsetting the balance and allowing the candida to grow unopposed.

Unfortunately, the typical medical approach to alleviating many of the complaints listed above usually begins with administering more antibiotics, which just makes matters worse.

If any of those symptoms I listed are jumping out at you, you feel addicted to sugar, crave breads or other carbohydrates, chances are youre being affected by candida and it would behoove you to modify your diet.

Sorry to say, candida and fungi thrive on sugar, carbs and fermented foods. So, while trying to cleanse the body, its best to avoid:
  • Sugars
  • Beer and wine
  • Vinegar
  • Pickles
  • Cheese
  • Mushrooms
  • Bread
  • Coffee
  • Dairy products (contain lactose, a milk sugar)
  • Acid-forming foods (fungi thrive in an acidic environment)
This change in diet is not simple. Cravings for sugar and carbs are extremely strong in someone with candida overgrowth, and may overpower any controlled approach to eating. This is why when folks write me to say that they "are addicted to cooked foods" and "keep falling off the raw wagon," I tell them that you have to eliminate the refined and processed foods from your diet first.

Youre probably thinking, "So what can I eat?" Foods to include are:
  • Fresh vegetables (raw or lightly steamed)
  • Leafy greens
  • Sea vegetables
  • Unprocessed, cold-pressed oils
  • Coconut water
  • Raw almonds
For you omnivores:
  • Wild-caught fish
  • Eggs, lean meats and poultry (free of antibiotics and growth hormones)
After a few weeks or so, you may slowly add fresh fruits to your diet. Fruits must be eaten alone and on an empty stomach. You can also add in whole grains like brown rice, millet, amaranth, and yeast-free breads.

To have a successful candida cleanse, its important to cleanse first and then rebuild healthy flora. Trying to rid the body of fungus and rebuild flora at the same time is counter productive because the bacteria do not stand a chance in the acidic environment the fungi create and the fungi just feed off the bacteria.

Its best to reintroduce and build healthy flora immediately after cleansing. There should be no gap between cleansing and rebuilding, otherwise the candida is likely to come back. One of the best ways you can rebuild healthy bacteria is by eating raw cultured vegetables – and lots of them. I talk about their benefits and how to make them here.

Helpful Herbs

Hanna Kroeger began working on candida in the early seventies, before anyone else acknowledged the issue. Her approach, as with all of her work, stemmed from hands-on experience with many thousands of people.

Realizing that fungi thrive in an acidic environment, Hannas herbal formulations employ the use of bitter herbs to stimulate the production of bile and neutralize the acidity of the digestive system. She also liked to use blood purifying herbs to help clear the blood of toxins from fungi and candida. It's already February 2; can you believe we're that far into the new year?  I normally post this monthly round-up of 25 Deliciously Healthy Low-Carb Recipes on the first day of the new month, but I waited a day because I was pretty sure my low-carb round-up wouldn't be able to compete with the Superbowl!  I spent last night at the Denny Family Superbowl Party at my brother Mark's house, where I tried hard not to consume too much of the sugary and carb-loaded foods most people bring.  (And I took these Deviled Eggs with Green Olives for Mark, who loves green olives as much as I do.)

This 4-pound bag of quinoa is a real bargain at my Costco, and I've become a quinoa fan!

How do you feel about Quinoa?  First of all, it's pronounced keen-wah, just in case you're not that familiar with this little seed that's cooked like rice and eaten as a grain.  Quinoa has become increasingly popular over the last few years, partly because it's high in protein and gluten-free and partly because it's tasty and can be used in a variety of ways.

I confess, I was a little slow to embrace Quinoa, and it was only when my Costco started carrying this huge bag of True Roots Organic Quinoa and I suddenly had 4 pounds of quinoa in the freezer that I started experimenting with it regularly.  Since then I've come to love quinoa as a side dish or the base for a salad, and I've gone through several of these big bags since I first bought one.  When I bought another one recently (for $9.99; what a bargain!) Cancer and Nutrition: Healthy Foods Support the Body

Eating a balanced diet is important for everyone. For those coping with cancer, a nutritious diet rich in proteins, healthy fats, and carbohydrates is especially important. It can help to support the body, mind, and spirit during the stress of diagnosis, treatment, and day-to-day life.

Although diet alone does not cure cancer, good nutrition may significantly help cancer patients. According to the American Cancer Society’s guidelines for nutrition during cancer treatments, those dealing with all kinds of cancer, from skin cancer to mesothelioma, should eat healthy to help feel better, tolerate treatment, and hasten recovery from surgeries and infections.

Cancer itself stresses the body and causes metabolic changes. Many lose their appetite and suffer drastic weight loss. Treatments can cause nausea and even affect the way food tastes. If the immune system is already weakened by poor nutrition, healing and recovery will be more difficult.

Protein is essential for cancer patients. It repairs body tissues and supports the immune system. Stresses placed on cancer patients increase the need for protein. Healthy proteins like lean meats, low-fat dairy products, lentils and soy build the body’s defenses and offset the weight loss and muscle weakness that may occur.

Good fats are also important for those with cancer.  Natural sources of fat, such as olive oil, flaxseed and nut butters boost the immune system and keep the body flexible. Saturated fats derived from animals, such as meat and cheese, are also helpful in moderation. It’s necessary to avoid trans-fatty acids as these fats raise cholesterol levels and contribute to body inflammation.

Carbohydrates provide energy and help to boost mood. Healthy carbohydrates from whole grains, fruits, and vegetables supply essential vitamins, minerals, and fiber. These support the immune and digestive system that are often weakened during cancer treatments. Carbohydrates provide the needed fuel for physical activity as exercise is also important part of coping with cancer.

Fluids, especially water, are essential during cancer treatment. Because the body can lose fluids through vomiting and diarrhea, staying hydrated is an important part of keeping the system functioning. Staying hydrated also helps the brain stay alert and keeps blood vessels supple.  A variety of fluids, including milk, tea, and juices, help keep the body hydrated and restore lost minerals and vitamins.

Supplements can aid in the intake of vitamins and minerals, but nutritionists and cancer experts warn that taking high doses of antioxidants such as vitamin C or E during treatments may be harmful and compromise the treatment. It’s important to discuss the need for supplements with a healthcare professional.

A healthy diet rich in nutrients from natural sources supports the immune system, boosts energy and elevates mood. Along with exercise, eating well is a powerful tool anyone can use to make cancer a little easier to handle.

The basic principles of healthy nutrition

Game Day can be Healthy
Ive been working on a few healthy recipes this week for Super Bowl Sunday. I was inspired by the many TV commercials that are pushing their chicken wings, candy, chips, soda, and other crap that is usually associated with watching football. There are so many delicious recipes that you can serve at football parties, I wouldnt think of serving my guests the types of food (and I use the term loosely) Ive seen advertised.

Now Im not suggesting that you pass around kale smoothies or do a group liver cleanse on game day. Im just saying that there are plenty of fun dishes that you and your family can enjoy without regret. After all, you probably made New Years resolutions to get back in shape, shed the holiday weight, and take better care of yourself in 2014. Its still January and way too soon to break out the Velveeta Queso dip!

Healthy Fries - an Oxymoron?
Its game day, lets splurge a little with some fries dipped in that delicious, Spicy Red Pepper Aioli I shared with you on Tuesday. But can fries be healthy? Well, maybe not as healthy as a raw salad, but lets say these are much healthier than traditional ones.

By using sweet potatoes rather than russets, you get twice the fiber and tons of vitamin A. Each ounce of the orange spud provide 79% of the daily required vitamin A while russets provide none. 

Baking versus deep frying produces fries with a lot less fat. A four ounce serving of my baked sweet potato fries contain one third the calories and only twenty percent of the fat of regular French fries. Each serving is only 130 calories with only 1/2 gram of saturated fat!

Garlicky Baked Sweet Potato Fries
Vegan, Gluten Free
[makes 4 servings]
Requires a cookie sheet covered with aluminum foil and a large metal cooling rack

1 teaspoon organic cornstarch
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
1 pound sweet potatoes
1 tablespoon olive oil

Preheat oven to 425 degrees F.

Cover a cookie sheet with aluminum foil and set a metal cooling rack (that is smaller than the cookie sheet) on top of it. Cooking the potatoes on a rack allows you to cook the fries without turning them.

Mix the cornstarch, salt, pepper, and garlic powder in a large bowl and set aside. Adding a little cornstarch helps the baked fries crisp up.

Cut the sweet potatoes into 3/8 inch fries and place in the bowl. Using your hands, mix until they are completely and uniformly covered with the seasoning.


Mix potatoes with the cornstarch and spices.

Drizzle the oil over the fries and mix them with your hands until they are completely and uniformly covered in oil. Place on the rack leaving enough space between the fries so that they cook evenly.


Place fries on the metal rack over the foil lined cookie sheet.

Place the potatoes in the oven away from the broiling coils. Bake at 425 degrees until they start to brown and look a little caramelized, about 30 minutes. 




Remove from the oven and serve with Spicy Red Pepper Aioli or with ketchup.


A little of this spicy dip goes a long way.

Per serving: 130 calories, 3 g total fat, 0.5 g saturated fat, 27 mg omega-3 and 346 mg omega-6 fatty acids, 0 mg cholesterol, 2 g protein, 23 g carbohydrates, 3 g dietary fiber, and 207 mg sodium.
